And on that note, it’s really no wonder that celebrity chefs like Eyck Zimmer enjoy making guest appearances. That’s right - you heard correctly. We’re thrilled to announce that Chef Zimmer will be our latest guest chef at Outrigger Konotta Maldives Resort this Fall, from October 21 through November 2, 2017.

During his time in the Maldives, the multi-award winning chef will create a special five-course menu at the intimate 16-seat Driftwood Restaurant by the beach. The wine pairing will be presented by guest sommelier LuAndre Volschenk. Chef Zimmer will also conduct a cooking class on the beach, again with paired wines.

Q: Chef Zimmer, welcome to Outrigger! We understand that you’re originally from Germany. What brought you to the Maldives?
A: I love experiencing different cultures and countries. So far I have travelled to 68 countries. This year my aim is to add the beautiful Maldives to my list. My former boss and colleague, John Allanson, the General Manager of Outrigger Konotta Maldives Resort, came up with the offer. It was too good to miss.

Q: When did you know you wanted to be a chef?
A: It was at the age of 14 or 15 when I watched Paul Bocuse on TV. I knew instantly that was what I wanted – to bring happiness to people with food!

Q: Where did you receive culinary training?
A: I received my training in East Germany at the best hotel in my hometown.

Q: How has your talent evolved over the years, and what has been your greatest inspiration?
A: As a chef you constantly learn and see things from different perspectives. My travels have influenced my style of cooking. I find most inspiration from authentic cooking, where the locals – often older women – cook traditional food.

Q: What’s your favorite dish or type of cuisine to eat?
A: Chefs who usually cook haute cuisine love the simple things outside the kitchen, for example, a perfect roast chicken. I also love a good risotto - the dish cooked in one pot, full of goodness. All the flavors stay in the rice - the stock, the Parmesan, the butter. The taste of a good risotto reflects that.

Q: What are your favorite ingredients to work with?
A: I have no favorites, all deserve to be cooked and eaten... A good cook knows exactly how to use ingredients to their fullest.

Q: What type of cuisine can guests of Outrigger Konotta Maldives Resort expect?
A: A simplistic cuisine full of flavor, with some interesting combinations that reflects my travels and experiences in different cultures.

Q: In your opinion, what makes the Maldives, and this resort specifically, such a unique getaway?
A: The Outrigger Konotta Maldives Resort is a hideaway from daily distractions -- perfect for the soul and the senses. People are given the chance to indulge and take their time to concentrate on the little things of life – good food being just one of them.

Q: What do you do for fun when you’re not cooking?
A: I have two dogs Kakao and Kaya. They keep me on my toes. Other times I try to keep fit at the gym.
