Set right on the ocean in Lahaina, this walk-up open-air bar and restaurant with seating under the kiawe shade trees is a great casual place for ono grinds—"good food." Chinese roast duck, Hawaiian laulau (taro-leaf-wrapped bundles of meats and fish) plate, and Korean kalbi ribs (marinated and cooked on a grill) are indicative of the mixed-plate culture that is part of Hawaii. We recommend the Alii Plate with Hawaiian laulau, lomilomi salmon, poi, rice, and coconut haupia (a light, pudding-like sweet) for dessert. The plates go well with drinks such as the Lava Flow, Peachy Passion, and Hawaiian Punch. This place is well regarded by locals and is a good pit stop for lunch.

You don't have to travel south of the border to enjoy the savory style of Mexican fare—just head to the Wharf Cinema Center in Lahaina to the latest Amigo's in the Maui franchise. Owner Jesus Ortega calls his tiny hot-as-a-tamale eateries "the three amigos" because there are three on Maui; the others are in Kihei and Kahului. Popular items include chile verde, chimichangas, and taco salads. Eat on the sunny lanai or catch some shade under one of the umbrellas, or at one of the few seats tucked inside. In a rush or having a party? There's takeout and a catering menu.

The signature restaurant of the Ritz-Carlton, Kapalua is better than ever after the resort's late 2007 makeover. Drink in views of the Pailolo Channel and Molokai from the outdoor bar and lounge with covered terrace. The dukka (Middle Eastern spices) delivered with your bread is a tip that this elegant dining hall offers plenty of worldly influences. Chef Ryan Urig excels with pine-nut-crusted ahi with cucumber noodles and Thai-basil pesto; crispy ehu with creamy Surfing Goat Dairy cheese polenta with beets and watercress; and Kona lobster with ginger-carrot risotto, tarragon, and coral butter. The open-beam restaurant's subdued atmosphere is sometimes charged with the sounds of live world music by Ranga Pae.

Above the Hyatt's wonderland of swimming pools and beneath a canopy of hau trees, you can enjoy a sampler of island treats—pot stickers, teriyaki beef skewers, and poke. Toast your good fortune with a kitschy tropical cocktail or junmai ginjo, a high-grade sake made from polished sushi rice. While there is something for the whole family, the real reason to dine here is the sushi. Savor lobster mango summer rolls with Thai basil and peanut chili sauce, and fun specialties such as the pizza roll. All are garnished with freshly grated wasabi root, a rare treat on Maui. For hot food, try the New York steak, sautéed lobster, and prawns. Note: you can order sushi and light fare until 10 PM.

The flavors of Old Mexico are given new life here, where the tortillas are hand-pressed and no fewer than nine chilies are used to create the salsas. Owner Paris Nabavi, a former high-end food and beverage pro, spent three years visiting authentic eateries in 40 Mexican cities. Let him take you south of the border with spinach, mushroom, and poblano enchiladas (a first-place winner in Taste of Lahaina); or scallops and prawns chile relleno with ancho tomato sauce, crema fresca, and roasted corn. The rotisserie chicken tacos with jicama slaw are also mouthwatering—and healthful. Look for Nabavi's collection of tortilla presses worn from duty, now hand-painted and displayed up on the wall.

Maybe your friend craves local grinds (food) such as mango barbecued pork ribs or chicken long rice, but you want something more touristy, such as New York steak with mashed potatoes. Both of you can get your fill at this neat-as-a-pin spot with tablecloths, friendly service, and extremely reasonable prices. The owners' Filipino heritage shines through with grandma's favorite of tortang talong (charbroiled eggplant with the skin peeled off, dipped in egg batter and panfried). It's served with white rice and fried plantains. New house favorites are the chicken papaya and the oxtail soup. This is the real Maui deal, and you won't find better Filipino specialties anywhere.

Even locals will stand in line up to half an hour to have diner fare at a table overlooking the beach at this slightly hard-to-find restaurant, an open-air gazebo (albeit an old and funky one) overlooking magnificent Napili Bay. Sunsets are phenomenal, and turtle and spinner dolphin sightings are common. The food is standard diner fare, but it's thoughtfully prepared. Breakfast choices include pancakes with macadamia-nuts, pineapple, and bananas; and the Kahuna omelet with Portuguese sausage, mushrooms, onions, bacon, avocado, and pepper-jack cheese. At lunch, there are satisfying bacon and avocado burgers and Southwestern salads. The friendly resort staff puts out coffee for those waiting in line.

French-born owner and top Lahaina chef Gerard Reversade honors the French tradition yet adds an island twist in such exquisite appetizers as shrimp sautéed in hazelnut oil, and ahi and smoked salmon carpaccio with lemon Chantilly. The rack of lamb Persillade offers a mint and lemon jus crust and is served with potatoes au gratin and stuffed tomatoes. You will be in heaven with the pineapple tart tatin à la mode. Located in the Plantation Inn, Gerard's resembles a country estate with balustrades and gingerbread latticework. Antique furnishings and wallpaper along with a wide veranda for dining make this perfect for special occasions. A first-class wine list and celebrity-spotting round out the experience.

Don't expect to sit down at this miniature restaurant sandwiched between a dive shop and a salon—this is strictly a takeout joint. It has a good reputation with the locals, so it's always packed. Sink your teeth into mahimahi with lemon capers, ono with a sun-dried tomato sauce, or spicy kung pao chicken. Or try chicken katsu (Japanese-style breaded and fried chicken), pork, and peas piled with the requisite two scoops of rice and macaroni-potato salad. You'll also find lighter fare such as vegetarian plates, sandwiches, and Chinese food. The spicy eggplant is delicious, and the fresh chow fun noodles (flat, wide Chinese rice noodles) sell out quickly.

Genial chef-restaurateur Peter Merriman, the pied piper of Hawaii Regional Cuisine, has teamed with TS Restaurant Group in this bustling, family-oriented restaurant. They have re-created a 1930s Hawaiian beach house, and every table has an ocean view. You can also dine on the beach, toes in the sand, at the Barefoot Bar where Hawaiian entertainment is presented every evening. Lunch items include such tasty dishes as shrimp, spinach, and Asian pear salad and Bahn Mi, a Vietnamese steak sandwich using local Maui Cattle Co. beef. Two types of fresh fish are offered nightly, often with lobster risotto or mango-jasmine rice and fresh local vegetables. Children of all ages scream for the ice-cream sandwich made with baked brownies and drizzled with raspberry sauce.

From its opening, this oceanfront restaurant established itself with its theatrical interior designed by the artist Dado and its contemporary Pacific Rim menu. Now its claim to fame is the produce from the owner's 8-acre, Upcountry organic farm, and the fresh catch caught by local fishermen using the trolling method. Menu favorites include a crispy ahi roll with root vegetables; the Road to Hana grilled fish with jasmine rice and fresh fruit; and the rainbow catch with goat cheese fondue and truffle oil. Desserts to savor are the Hawaiian vintage chocolate mousse and the chocolate pâté with Kula strawberries. The monthly Io Wine Club affairs can be quite entertaining.

This popular sushi restaurant in the Ritz-Carlton, Kapalua takes design inspiration from the arrival of the ancient Hawaiians over the sea. Hand-carved ceiling beams resemble outrigger canoes, and the back wall of the bar glows like lava. This is a great place to meet friends and raise your chopsticks to a rainbow roll or fresh ahi sashimi before heading to the neighboring Alaloa Lounge. The menu also includes hot Japanese entrées such as baked crab dynamite, but your best bet is to let Tokyo native, chef Tadashi Yoshino, design the meal. His top sellers include tuna tataki salad in ponzu sauce and the Yamato Roll with fresh hamachi (yellowtail) and spicy tuna. The kitchen is open until 9 PM.

On a warm Lahaina day, it's a treat to relax at an umbrella-shaded table on this restaurant's lanai as you sip a mai tai and watch the tour boats glide in and out of nearby Lahaina Harbor. The deck area hangs directly over the water so you might even spot some of Maui's tropical fish swimming below. A good portion of the menu is devoted to fresh fish, with five or six varieties and preparations to choose from each night—a highlight is the panko-crusted catch with beurre blanc. Try the signature dessert, Hula Pie: vanilla-macadamia nut ice cream topped with chocolate fudge and whipped cream in an Oreo-cookie crust. Or pop in mid-afternoon to enjoy happy hour.

Breezy, small, and popular with locals, this café and bar with a replica of a record-winning 955-pound blue marlin hanging on the wall serves such tantalizing fare as Evil Jungle Pasta (pasta with grilled chicken in spicy Thai peanut sauce) and Pork Chops with Chinese Five-Spice Marinade. The restaurant likes to buy its fish from nearby Lahaina Harbor fishermen, who are often spotted eating huevos rancheros with kalua pork (baked underground in an imu) or loco moco (a hamburger patty and over-easy egg on top of rice, slathered in brown gravy) for breakfast on the sunny lanai. The café is a couple of blocks down from busy Front Street, so expect a nice mix of locals and tourists.

A culinary force since 1990, Lahaina Grill lost the "David Paul's" part of its name late in 2007, but under the latest owner Jurg Munch, executive chef at the Mandarin Oriental in Hong Kong for years, the celebrated updated American food and the service remain consistent. Beautifully designed with stamped-tin ceilings, splashy artwork, and overhead fans, it is part of an elegant historic building and boasts a sommelier who rules over an extensive wine cellar and pastry chefs who do magic in the in-house bakery. Try the seared ahi with foie gras or the crispy-fried blue corn-crusted chile relleno filled with Hawaiian Big Island prawns, scallops, and Monterey Jack cheese. Save room for the scrumptious triple-berry pie. Smaller portions are available at the bar.

A Lahaina landmark, Longhi's has been drawing in throngs of visitors since 1976. Its authentic Italian pastas, sandwiches, seafood, beef, and chicken dishes were created by owner Bob Longhi, "the man who loves to eat." The in-house bakery turns out breakfast pastries, desserts, and pizza bread, the latter complimentary with your meal. Definitely for two, the signature lobster Longhi includes two lobsters over linguine and pomodoro sauce with mussels, clams, and prawns. Another must try is the fillet Longhi, served with red and yellow bell peppers. There are two spacious, open-air levels from which to choose; and there's a second Maui restaurant on the South Shore, at the Shops at Wailea.

On the water's edge, above the tide-tossed rocks, stands this cheery yellow-walled, open-air restaurant owned by noted Hawaii Regional Cuisine chef Mark Ellman and his wife, Judy. The menu, composed of mostly organic and locally sourced ingredients, includes flavorful flat breads and a Kobe burger with Maytag blue cheese. Don't miss the calamari, battered and fried with lemon slices and served with a spicy mojo verde (jalapeño cilantro pesto). This is a good place to try moi, the fish of Hawaiian royalty, wok-fried with ginger and spicy black-bean sauce. Fans of the Caramel Miranda dessert at Avalon (Ellman's former restaurant) can find it here. In the evening, the bar is a coveted hangout, and weekend brunch is lively. In addition, a much bigger Mala Ocean Tavern opened in Wailea in mid-2008 as a co-venture between Ellman and a number of celeb partners, including Clint Eastwood and Alice Cooper.

Lahaina's only authentic Irish pub offers the freshest and finest pint of Guinness on the island. Stomp your feet to Irish music as you dine on fish-and-chips, bangers and mash, and corned beef and cabbage, or try Pancho Mulligan's Mexican specialties and island selections. Satellite sports such as soccer, rugby, football, baseball, and hockey are on the TVs, especially for weekend college and pro sports. Owner Kevin O'Kennedy often jumps onstage to contribute his signature tin whistle to the nightly live music—traditional and contemporary. It's fun for the whole family until 10 PM, when it morphs into a happening late-night spot for those 21 and over until 2 AM.

Casual and fun, this restaurant has all outdoor seating under umbrellas next to the Westin Maui's magnificent pool; streams also meander by the tables. It features a host of island fare such as golden calamari strips; Haiku salad with lime, tomato, and Chinese black-bean salsa; and furikake seared ahi on sesame focaccia with wasabi cream and daikon relish. This is a good place to bring the kids, who can munch away on the beef tenderloin kebabs while you sample the Hokkaido scallops and asparagus doused in a not-too-spicy kimchi cream. Tourists keep coming back for the popular dinner of macadamia-nut chicken with jasmine rice and grilled vegetables in katsu butter. Changing varieties of fresh fish are offered nightly.

You can sit outdoors at umbrella-shaded tables near the water's edge, or find a spot in the breezy, marble-floor interior of this seafood haven. All the produce comes from the owner's Upcountry organic farm, just as it does at its sister restaurant Io. The exciting menu features the appropriately named bling bling, which is grilled petit filet mignon topped with Gorgonzola cheese and ginger butter; and poached lobster with potato du jour and tempura asparagus. Another fun dish is fresh ahi-and-ono tempura, in which the two kinds of fish are wrapped around tobiko (flying-fish roe), then wrapped in nori, and wok-fried. For dessert, try the banana pineapple lumpia served hot with homemade banana ice cream.

A couple of blocks off the beaten path in Lahaina, little Penne Pasta packs a powerhouse of a menu, as might be expected from a place owned by chef Mark Ellman of the Mala Ocean Tavern. Heaping plates of reasonably priced, flavorful pasta and low-key service make this restaurant the perfect alternative to an expensive night in the resort areas. House favorites are cheesy baked penne in tomato cream sauce and linguine in clam sauce with lemon butter. The osso buco (Wednesday's special) is a lamb shank with fettuccine, lamb ragout, and salad. The salade niçoise overflows with olives, peppers, garlic ahi, and potatoes. Couples should split a salad and entrée, as portions are large.

With a menu built almost entirely around local ingredients, Pineapple Grill attracts those foodies who appreciate exceptional Pacific Island cuisine such as stuffed Kamuela vine-ripened tomatoes, ahi and salmon tartare, Molokai sweet potatoes, and Maui Gold pineapple upside-down cake for dessert. A Maui Seafood Watch participant, the restaurant only serves seafood that has been harvested sustainably. So go on—order the Kona lobster. The restaurant also features Wine Spectator's annual top 100 wines by the glass. At night, you can witness spectacular sunsets overlooking the golf greens and the Pacific; the outdoor tables facing the West Maui Mountains can be even nicer than those with an ocean view. There's live entertainment and 50% off the bar menu every Wednesday night.

It's hard to decide which is better here, the food or the view. Perched high above Kapalua's coastline, this estatelike restaurant at the Plantation Course has the misty Maui Mountains behind, and views of Molokai and the Pailolo Channel in front. The menu is on par with the surroundings and features Mediterranean flavors blended with local ingredients. Longtime Chef Alex Stanislaw began doing the sustainability thing even before it became widespread. He uses neighboring Kapalua Farms' vegetables and prepares two or three fresh Hawaiian fish seven different ways nightly. A favorite is the Venice: panko-crusted and sautéed fish on risotto with Kula sugar peas, Oahu asparagus, and Pacific shrimp. Breakfast here is luxurious; try the Bloody Mary with pickled asparagus and one of the famous Benedicts.

Founder Roy Yamaguchi is a James Beard Award-winning chef who now has almost 40 restaurants to his name from Japan to Florida. This is one of his first, and regulars keep returning for his Hawaiian-fusion specialties and private-label wines and beers. Favorites include Kona kampachi tataki with sizzling yuzu soy and sesame snap peas; crisp Sonoma duck breast with Makawao mushroom risotto cake; and pepper-seared scallops and seared white shrimp with saffron rice. Locals know to order the incomparable chocolate soufflé immediately after being seated. Both branches, in Kahana and Kihei, are in supermarket parking lots—it's not the view that excites; it's the fantastic food and the welcoming and professional service.

One of the best-loved restaurants in Hawaii with locations on four of the Islands, Sansei is Japanese with a contemporary Hawaiian twist. Inspired dishes include a panko (Japanese bread crumb)-crusted ahi sashimi roll, rock shrimp in creamy garlic aioli, spicy fried calamari with kochujang (Korean hot pepper paste), and the signature mango-and-crab-salad roll. Those who love French cuisine will appreciate the decadent foie gras nigiri sushi. Desserts such as deep-fried tempura ice cream are worth the calories. The Kapalua location uses colors such as pumpkin, butterscotch, and sage that all add a tasty touch. Both this and the Kihei locations are popular karaoke hangouts, serving early-bird and late-night sushi at half price.

Built in the 1960s at Napili Kai Beach Resort, this restaurant came before laws that forbid buildings to be so close to the beach—and what a beach it is. Napili Bay is drop-dead gorgeous. Wear your beach wrap during the day or come for a casual meal after a day of water sports. The breakfast, lunch, and dinner menus are varied; best bets include the Molokai sweet-potato egg frittata with chicken sausage and spinach, the berry pancakes, and the Reuben sandwich. For dinner, go for the popular Taste of Lahaina sampler of huli huli (a sugar, soy, and ginger sauce for barbecue) lamb chops, macadamia nut shrimp, and sushi.

Descend the grand staircase into an amber-lighted dining room with soaring ceilings and a massive artificial lagoon with swans, waterfalls, and tropical gardens. Choose your evening's libation from one of 3,000 bottles of wine, the largest cellar in the state. Must-haves on chef Geno Samiento's contemporary, Mediterranean-influenced menu include tiger shrimp penne à la vodka; goat-cheese ravioli of fresh Kula corn, edamame, and Hamakua mushrooms; and opakapaka (blue snapper) served with artichokes, sweet-potato hash browns, and tomato puree.
